Short essays on Chinese foods abroad, bamboo shoots, water chestnuts, bean curd (an invaluable food), See You (soy bean sauce), Chinese rice, preserving, and beverages are interspersed with thirty recipes. There is also a recipe for dim sums; the uniquely Melbourne version of a Cantonese siu mai dumpling. Geechoun was the son of Chinese market-gardeners in the Victorian city of Bendigo, who went on to become an importer, parliamentarian, and owner of the Kowlon restaurant in South Yarra.
